    Mushroom Risotto

Mushrooms are like the meat of the vegetable world and I often ponder how easy they would make becoming a vegetarian as I can simply never have enough of them. Meaty and fleshy and in my view so much more tasty than meat with so much more potential. When given the choice I will always choose a mushroom dish over a meat dish. Hence my decision to go with the Mushroom Risotto at the University Cafe in Lygon Street, Carlton for lunch. A cold but clear Saturday in Melbourne, sitting outside under the heaters soaking up the ambience and feeling like we were somewhere in Europe! The risotto more than lived up to my expectations, creamy not gluggy and rich with the earthy and meaty taste of various mushrooms and garlic. It was beautiful, highlighted further with a shaving of Parmesan and a generous helping of freshly cracked black pepper. Seriously it's heavenly and no matter how full you are you can always finish the dish and wish there was still some more. Such is the taste and allure of the humble mushroom! I salute you!

    Magic Mushrooms

This dish is ment to be a shared appetiser, but every time I order it, I can't bear to hand any over. The mushrooms are stuffed with herbs, feta cheese and bacon. They are then drizzled or dipped in a tangy ranch sauce. Enjoyed piping hot with a cold beer and some great laughs, I challenge you to find a tastier mushroom morsel!!

    Gnocchi con Pancetta

Delicate potato gnocchi, melting like little pillows of golden inside my mouth, finished with a tomato-based sauce was an impressive dish I had at Ambrosini's recently. The dish's flavours of pancetta, capsicum and mushroom added flavour and pizzazz to this dish, with the pancetta cooked crispy and mushrooms cooked delicately. A spectacular dish that had my tastebuds craving more!

    Spaghetti Carbonara

I had a Spaghetti Carbonara at Lazy Moe's the other week, the taste of the mushrooms excited my taste buds no end. The dish may have been pasta but it had lots and lots of delicious mushrooms, in a creamy sauce.
